Une formation de trois ans qui lui a transmis la passion du m\u00e9tier et qui lui a valu le titre de meilleur Apprenti p\u00e2tissier de la r\u00e9gion, en plus de finir \u00e0 la quatri\u00e8me\u00a0place au concours national en 2005. Il a ensuite quitt\u00e9 l\u2019ouest de la France pour les bords de la Loire, \u00e0 Blois, chez Eric Saguez, MOF (meilleur ouvrier de France) o\u00f9 il a approfondi les p\u00e2tisseries haut de gamme et la rigueur du m\u00e9tier. Il s\u2019est ensuite retrouv\u00e9 au Reine \u00c9lizabeth, aux c\u00f4t\u00e9s de Jean-Marc Guillot, MOF et champion du monde de la p\u00e2tisserie. Fort de ces ann\u00e9es d\u2019exp\u00e9rience, il a ensuite rejoint le Montr\u00e9al Marriott Ch\u00e2teau Champlain pour son premier poste de chef p\u00e2tissier en h\u00f4tellerie.
